Abstract


In order to develop reliable Cariogenic potential of foodstuffs, three different plaque pH measurements were performed. First, the dental plaque was made in artificial mouth and plaque microorganism was sampled with paper point for incubation of
S.
mutans and Lactobacilli before plaque pH measure, and the plaque pH was measured with glass micro-electrode(MI-402: Micro Electrode Inc, U.S.A.) at 1 min intervai after rinsed the plaque with 10% sucrose solution. Second, the dental plaque was
made
on
the embeded tooth surface of the retainer in human mouth and human mouth was rinsed with 0.1% pepton solution for incubation of S.mutans and Lactobacilli before plaque pH measure, and the plaque pH was measured directly in human mouth with glass
micro-electrode(MI-402:Micro Eectrode Inc, U.S.A) at 1 min interval after human mouth rinsing with 10% sucrose solution, Third, the dental plaque was made on the surface of retainer made of resin in human mouth and human mouth was rinsed with
0.1%
pepton solution and plaque was collected for incubation of S.mutans and lactobacilli before plaque pH measure, and the plaque pH was measured in test tubes which contain 50§¡ of 45% Nacl solution and sampled plaque from the surface of retainer at
5
min
interval with glass micro-electrode after human mouth rinsing with 10% sucrose solution, Simple correlation coefficient, coefficient of S.mutans /Lactobacilli and area below pH5.7 was calculated. Regression eanalysis and stepwise analysis was
performed.
